Courgette Spaghetti met Pesto en Geitenkaas
Kleine lunch voor 1 persoon
- 1/2 courgette
- 4 cherry tomaatjes
- el pesto
- handje pijnboom pitjes
- blokje geitenkaas
Rasp de courgette met een julienne rasp tot spaghetti. Snij de tomaatjes in vieren. Mix de courgette spaghetti met de pesto en breng op smaak met peper en zout. Strooi de tomaatjes en de geitenkaas erover heen. Rooster in een droge pan eventueel de pijnboom pitten en strooi die er ook overheen. Om mee te nemen doe je alles in een bakje wat goed sluit. En voilà!

If you have to go to school, uni or work it is really tempting to buy a sandwich, some fries or something else along the way. This maybe tastes good but this is mostly not the healthiest choice. So one of my friends asked me if I had some lunch or snack ideas to bring with you on the go. I always bring my own food when going to uni, because this can be quite as good and saves you money as well. On top of that this way you know what you eat, which means you can be sure that you are eating something healthy! Yesterday I came across a zucchini spaghetti recipe and I instantly got the idea to bring this with my for lunch, because it does not have to be warmed up and it is really easy to make. You can take this recipe and make the portion as big or small as you want and can also be served as a main dish or as a side dish.
Zucchini Spaghetti with Pesto and Goat Cheese
- 1/2 Zucchini
- 4 cherry tomatoes
- tbsp pesto
- little handful of pine nuts
- dice of goat cheese (crumbled)
Peel the zucchini with a julienne grater or a spiralizer. Cut the tomatoes in quarters. Mix the zucchini with the pesto and add some salt and paper to taste. Top with the tomatoes and the crumbled goat cheese. Dry roast (if preferred) the pine nuts and sprinkle them on the 'spaghetti'. If you want to bring this with you, put everything in a box that closes tightly. Enjoy!
