Once upon a time, there was a girl. She woke up one morning and looked outside her window pane, "the weather is getting so cold and there is rain!" Sadness flew all over her. She needed some warmth and sun to brighten her up and give her some beautiful energy to take on the day. She loved tropical paradises with all her heart and dreamt every night of a place like that. She hoped that a big bowl of deliciousness would bring her a little closer to the place of her dreams and she looked in her pantry for things to find. A mango, some oats and a little coconut was what she could see. "Would this bring me some energy?" However it did not brought her a one way ticket, it did give her a sunshine boost only looking at the breakfast she created. The first bite was like a tropical heaven and it only kept getting better! It is warm and comforting for a cold and rainy day and bright, light and sunny to make that day a lovely day. And when she closed her eyes, it was almost if she was in paradise.
Het leven als een sprookje, dat was mijn gevoel bij dit recept. Nadat ik het op had kwam gelijk dit verhaaltje eruit rollen, een echt inspiratie maaltje dus. Nu het kouder en grauwer wordt buiten heeft iedereen af een toe een flinke dosis licht en leven nodig en dit havermout recept smaakt echt naar een paradijsje. De perfecte combinatie van mango, kokos en een beetje ananas in de vorm van een warm en heerlijk ontbijtje is super voor een koude ochtend. Het barst van de vitamientjes en is ook nog eens gemakkelijk te maken!

Tropische Mango Havermout
Ingrediƫnten
- 40 gr oats
- 100 ml kokoswater ananas (merk: Healthy People, ook lulu's favoriet haha)
- 100 ml soya melk
- 50 ml gefilterd water
- 1/2 mango in blokjes
- 1 gedroogde vijg
- klein handje goji bessen
- tl kaneel
- gember poeder
Methode
Giet de kokos ananas water, soya melk en water in een pannetje. Verwarm het totdat het kookt, zet dan het vuur lager en gooi de havermout erbij samen met een beetje gember poeder en de kaneel. Blijf roeren tot het een papje is en zet het vuur uit. roer alvast een beetje van de mango erdoor en giet in een kom. Top met de rest van de mango, vijg en goji bessen en geniet van dit tropische ontbijtje!

Life as a fairytale, that was the feeling I got when making this recipe. After I finished it, this little story rolled right out of my head, one inspirational breakfast it was. With the days getting colder and grayer, everyone could use a good dose of light and life and this oatmeal recipe really tastes like a piece of paradise. The perfect combination of mango, coconut and a hint of pineapple in the form of a warm and delicious breakfast is perfect for a cold morning. It bursts of vitamins and it also is really easy to make!
Tropical Mango Oats
Ingredients
- 40 gr oats
- 100 ml coconut water pineapple (brand Healthy People)
- 100 ml soy milk
- 50 ml filtered water
- 1/2 mango in cubes
- 1 dried vig
- small handful of goji berries
- tsp cinnamon
- little ground ginger
Method
Pour the coconut water, soy milk and water in a pan and bring to a boil, turn down the heat and add the oats, cinnamon and ginger. Stir till you desired consistency, turn off the heat and stir in some of the mango. Pour the oatmeal in a bowl and top with the rest of the mango, the dried fig and the goji berries and enjoy this delicious tropical breakfast!
